{"id":1,"date":"2014-11-23T21:16:21","date_gmt":"2014-11-23T21:16:21","guid":{"rendered":"http:\/\/stews200.com\/?p=1"},"modified":"2014-11-29T11:58:58","modified_gmt":"2014-11-29T11:58:58","slug":"hello-world","status":"publish","type":"post","link":"https:\/\/stews200.com\/?p=1","title":{"rendered":"Cuban Red Beans"},"content":{"rendered":"<p><a href=\"http:\/\/stews200.com\/wp-content\/uploads\/2014\/11\/Cuban-Red-Bean-Stew.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignleft size-full wp-image-20\" src=\"http:\/\/stews200.com\/wp-content\/uploads\/2014\/11\/Cuban-Red-Bean-Stew.jpg\" alt=\"Cuban Red Bean Stew\" width=\"220\" height=\"220\" srcset=\"https:\/\/stews200.com\/wp-content\/uploads\/2014\/11\/Cuban-Red-Bean-Stew.jpg 220w, https:\/\/stews200.com\/wp-content\/uploads\/2014\/11\/Cuban-Red-Bean-Stew-150x150.jpg 150w\" sizes=\"(max-width: 220px) 100vw, 220px\" \/><\/a>Scented with sherry, this simple and flavorful bean dish features onions, green pepper, garlic, cumin and tomatoes with a kick of heat from red chili flakes.<!--more--><\/p>\n<p style=\"text-align: center;\"><strong>Serves 6<\/strong><\/p>\n<p>3 to 4 tablespoons virgin olive oil<br \/>\n1 large onion, chopped<br \/>\n1 medium green bell pepper, chopped<br \/>\n6 plump cloves garlic, minced<br \/>\n1 \u00bd teaspoons whole cumin seeds<br \/>\n1 cup tomato puree<br \/>\n\u00bd cup dry sherry<br \/>\n1 tablespoon sherry vinegar or red wine vinegar<br \/>\n1 bay leaf<br \/>\n1 \u00bd\u00a0 teaspoons fresh chopped oregano or \u00bd teaspoon dried<br \/>\n\u00bc to \u00bd teaspoon crushed red chili flakes or to taste<br \/>\n3 cups cooked red kidney beans or two 16-ounce cans, rinsed and drained<br \/>\nsalt and freshly ground black pepper to taste<br \/>\n\u00bc freshly chopped parsley<br \/>\n\u00bd cup coarsely crumbled feta cheese<\/p>\n<ol>\n<li>Heat the olive oil in a large stewpot over low heat until it is fragrant. Add the onion, bell pepper and garlic. Cook about 10 to 15 minutes until the vegetables are softened. Add the cumin and cook 1 to 2 minutes. Add the tomato puree, sherry, vinegar, bay leaf, oregano, chili flakes and simmer about 15 to 20 minutes until the sauce is slightly thickened.<\/li>\n<\/ol>\n<ol start=\"2\">\n<li>Add the beans to the pot and simmer for 15 to 20 minutes or until hot. Season with salt and pepper to taste.
